1️⃣ Prepare the Birria Sauce | Blend soaked guajillo & ancho chilies, chipotle, tomato, onion, garlic, vinegar, cumin, oregano, paprika, cinnamon, and soy sauce. Heat oil in a pan, add sauce, and cook for 5 minutes. |
2️⃣ Simmer the Jackfruit | Add shredded jackfruit and vegetable broth to the sauce. Stir well and simmer for 25-30 minutes until jackfruit softens. Shred it further for a meat-like texture. |
3️⃣ Prepare the Consomé | Strain some of the sauce into a small bowl—this is your dipping consomé. |
4️⃣ Assemble the Tacos | Heat a skillet with oil. Dip tortillas in the consomé, place on skillet, add jackfruit filling, and fold in half. Cook for about 2 minutes per side until crispy. |
