For the “Carne” (Seitan or Mushrooms)

1 lb seitan (or portobello mushrooms, sliced thick)

2 tbsp olive oil
For the Marinade

ยผ cup soy sauce or tamari
โ
2 tbsp lime juice
โ
2 tbsp orange juice
โ
2 tbsp olive oil
โ
1 tbsp apple cider vinegar
โ
2 tsp maple syrup or agave
โ
1 tsp smoked paprika
โ
1 tsp garlic powder
โ
1 tsp onion powder
โ
ยฝ tsp cumin
โ
ยฝ tsp chili powder
โ
ยฝ tsp black pepper
โ
ยผ tsp cayenne (optional, for heat)
โ
ยผ cup chopped cilantro
๐ฅ Instructions
1๏ธโฃ Prepare the Marinade
- In a bowl, whisk together soy sauce, lime juice, orange juice, olive oil, vinegar, maple syrup, and all the spices.
- Stir in chopped cilantro for extra freshness.
2๏ธโฃ Marinate the Seitan or Mushrooms
- Place seitan (or mushrooms) in a shallow dish or ziplock bag.
- Pour the marinade over and toss to coat.
- Let marinate for at least 30 minutes (or up to 8 hours for max flavor).
3๏ธโฃ Cook the Vegan Carne Asada
- Heat a grill pan or cast-iron skillet over medium-high heat.
- Add olive oil and sear seitan/mushrooms for 3-5 minutes per side until charred and caramelized.

- Let it rest for a couple of minutes, then slice thinly.
