Vegan Mushroom Wings
Ingredients
For the Mushroom Wings:
8 oz oyster mushrooms (or king oyster mushrooms, torn into āwingā shapes)
1 cup unsweetened plant milk
1 tbsp apple cider vinegar (creates a buttermilk effect!)
1 cup all-purpose flour
Ā½ cup cornstarch (for extra crispiness!)
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Ā½ tsp salt
Ā½ tsp black pepper
1 tsp baking powder (helps make them extra crispy!)
Vegetable oil for frying
For the Sauce:
Ā½ cup hot sauce or BBQ sauce (Buffalo, BBQ, or Teriyakiāyour choice!)
2 tbsp vegan butter, melted
Instructions
Prepare the Mushroom āWingsā
- Clean and trim the oyster mushrooms, keeping them in larger, wing-sized pieces.
Make the Batter & Breading
- In a bowl, whisk together plant milk and apple cider vinegar. Let sit for 5 minutes.
- In another bowl, mix flour, cornstarch, baking powder, and seasonings.
Coat the Mushrooms
- Dip each mushroom first in the wet batter, then coat in the dry breading.
- For extra crispy wings, repeat the process twice!
Fry Until Golden
- Heat oil to 350Ā°F (175Ā°C) and fry mushrooms for 3-5 minutes per side, until golden brown.
- Drain on a paper towel.
Toss in Sauce & Serve
- Toss wings in your favorite sauce and enjoy!
