🌱 Vegan Carne Asada
🥑 Ingredients
For the “Carne” (Seitan or Mushrooms)
✅ 1 lb seitan (or portobello mushrooms, sliced thick)
✅ 2 tbsp olive oil
For the Marinade
✅ ¼ cup soy sauce or tamari
✅ 2 tbsp lime juice
✅ 2 tbsp orange juice
✅ 2 tbsp olive oil
✅ 1 tbsp apple cider vinegar
✅ 2 tsp maple syrup or agave
✅ 1 tsp smoked paprika
✅ 1 tsp garlic powder
✅ 1 tsp onion powder
✅ ½ tsp cumin
✅ ½ tsp chili powder
✅ ½ tsp black pepper
✅ ¼ tsp cayenne (optional, for heat)
✅ ¼ cup chopped cilantro
🔥 Instructions
1️⃣ Prepare the Marinade
- In a bowl, whisk together soy sauce, lime juice, orange juice, olive oil, vinegar, maple syrup, and all the spices.
- Stir in chopped cilantro for extra freshness.
2️⃣ Marinate the Seitan or Mushrooms
- Place seitan (or mushrooms) in a shallow dish or ziplock bag.
- Pour the marinade over and toss to coat.
- Let marinate for at least 30 minutes (or up to 8 hours for max flavor).
3️⃣ Cook the Vegan Carne Asada
- Heat a grill pan or cast-iron skillet over medium-high heat.
- Add olive oil and sear seitan/mushrooms for 3-5 minutes per side until charred and caramelized.
4️⃣ Slice & Serve
- Let it rest for a couple of minutes, then slice thinly.
- Serve in tacos, burritos, bowls, or with rice & beans!
