🌱 Vegan Mushroom Wings
🥢 Ingredients
For the Mushroom Wings:
✅ 8 oz oyster mushrooms (or king oyster mushrooms, torn into “wing” shapes)
✅ 1 cup unsweetened plant milk
✅ 1 tbsp apple cider vinegar (creates a buttermilk effect!)
✅ 1 cup all-purpose flour
✅ ½ cup cornstarch (for extra crispiness!)
✅ 1 tsp garlic powder
✅ 1 tsp onion powder
✅ 1 tsp smoked paprika
✅ ½ tsp salt
✅ ½ tsp black pepper
✅ 1 tsp baking powder (helps make them extra crispy!)
✅ Vegetable oil for frying
For the Sauce:
✅ ½ cup hot sauce or BBQ sauce (Buffalo, BBQ, or Teriyaki—your choice!)
✅ 2 tbsp vegan butter, melted
🔥 Instructions
1️⃣ Prepare the Mushroom “Wings”
- Clean and trim the oyster mushrooms, keeping them in larger, wing-sized pieces.
2️⃣ Make the Batter & Breading
- In a bowl, whisk together plant milk and apple cider vinegar. Let sit for 5 minutes.
- In another bowl, mix flour, cornstarch, baking powder, and seasonings.
3️⃣ Coat the Mushrooms
- Dip each mushroom first in the wet batter, then coat in the dry breading.
- For extra crispy wings, repeat the process twice!
4️⃣ Fry Until Golden
- Heat oil to 350°F (175°C) and fry mushrooms for 3-5 minutes per side, until golden brown.
- Drain on a paper towel.
5️⃣ Toss in Sauce & Serve
- Toss wings in your favorite sauce and enjoy!
