Vegan Stuffed Flatbread Recipe


📝 Ingredients

For the Dough:

  • 2 cups all-purpose flour (or whole wheat flour)
  • ½ teaspoon salt
  • ¾ cup warm water
  • 2 tablespoons olive oil

For the Filling:

  • 1 cup shredded vegan cheese (cheddar, mozzarella, or a mix)
  • ½ cup finely chopped spinach
  • ¼ cup grated carrot
  • ¼ cup finely chopped mushrooms (adds a savory, umami flavor)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika (optional, for extra flavor)
  • Salt & pepper to taste

👨‍🍳 Instructions

1️⃣ Prepare the Dough

✔️ In a large bowl, mix the flour and salt.
✔️ Add warm water and olive oil, then knead until smooth.
✔️ Cover and let rest for 30 minutes.

2️⃣ Make the Filling

✔️ In a bowl, combine vegan cheese, spinach, carrot, mushrooms, garlic powder, onion powder, smoked paprika, salt, and pepper.
✔️ Mix until well combined.

3️⃣ Assemble the Flatbreads

✔️ Divide the dough into equal portions and roll into thin circles.
✔️ Place filling in the center of half the circles.
✔️ Cover with another dough circle and press edges to seal.

4️⃣ Cook the Flatbreads

✔️ Heat a skillet over medium heat and lightly grease it.
✔️ Cook each flatbread for 3-4 minutes per side until golden brown.

5️⃣ Serve & Enjoy
