Ingredients
For the Tofu Satay:
- 1 block (14 oz) extra-firm tofu, pressed and cut into cubes
- 2 tbsp soy sauce or tamari
- 1 tbsp maple syrup
- 1 tbsp lime juice
- 1 tsp garlic powder
- 1/2 tsp ground ginger
- 1 tbsp sesame oil (or neutral oil)
For the Peanut Sauce:
- 1/2 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp rice vinegar or lime juice
- 1 tsp sriracha (adjust for spice level)
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1/4 cup warm water (to thin out sauce as needed)
For Serving:
- Chopped peanuts
- Fresh cilantro
- Lime wedges
- Cooked rice or lettuce wraps
Instructions
1. Prepare the Tofu:
- Press the tofu for 15-20 minutes to remove excess moisture, then cut into cubes.
- In a bowl, mix soy sauce, maple syrup, lime juice, garlic powder, ginger, and sesame oil.
- Toss the tofu in the marinade and let it sit for at least 15 minutes.
2. Cook the Tofu:
- Oven: Preheat to 400°F (200°C). Place tofu on a lined baking sheet and bake for 20-25 minutes, flipping halfway.
- Air Fryer: Cook at 375°F (190°C) for 12-15 minutes, shaking the basket occasionally.
- Stovetop: Heat a pan with a little oil and cook tofu until golden brown on all sides.
3. Make the Peanut Sauce:
- In a small bowl, whisk together peanut butter, soy sauce, maple syrup, vinegar, sriracha, ginger, garlic, and warm water. Adjust consistency as needed.
4. Assemble & Serve:
- Thread tofu cubes onto skewers if desired.
- Drizzle or dip in peanut sauce.
- Garnish with chopped peanuts, cilantro, and lime wedges.
- Serve over rice or with lettuce wraps for a fresh, flavorful meal!
