  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth
  • 2 medium potatoes, peeled and diced or a can of white beans
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional, for added richness) or flour and butter (as seen in video)
  • Fresh chives, chopped (for garnish)
  • Thyme
  • Optional- White Wine
* Please note that this recipe uses heavy cream instead of butter and flour. You can use flour and butter as seen in the burnt leek video, or you can use heavy cream.
