No Bun, no problem... here is a recipe for a bunless egg sandwich.

As someone that is allergic to gluten, I am always searching for something that will replace bread. A Frittata is the Italian version of the American Omelette. It can be a nice substitute for a bunless egg sandwich. 

Here is my recipe for the breadless breakfast sandwich that is gluten free and can also be made for vegetarians. 

Breadless Breakfast Frittata Sandwich

Ingredients:

  • For the Frittata:

    • 6 large eggs
    • 1/4 cup milk or heavy cream
    • 1/2 cup diced bell peppers (any color)
    • 1/2 cup diced onions
    • 1/2 cup diced mushrooms
    • 1/2 cup chopped spinach
    • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
    • Salt and pepper to taste
    • 1 tbsp olive oil or butter
  • For the Filling:

    • 4-6 slices of cooked bacon or sausage patties ( I use plant based meat)
    • 1 avocado, sliced
    • Tomato slices
    • Lettuce leaves
    • Cheese slices (optional)
    • Hot sauce or ketchup (optional)

Instructions:

  1. Preheat your oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Frittata:

    • In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
    • Heat olive oil or butter in an oven-safe skillet over medium heat. Add the diced bell peppers, onions, and mushrooms. Sauté until the vegetables are soft, about 5-7 minutes.
    • Add the spinach and cook for another 1-2 minutes until wilted.
    • Pour the egg mixture over the vegetables in the skillet. Sprinkle the shredded cheese evenly over the top.
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and slightly golden on top.
  3. Assemble the Sandwich:

    • Once the frittata is done, let it cool slightly. Cut it into squares or use a round cutter to make frittata “buns.”
    • To build the sandwich, take one piece of the frittata and layer it with bacon or sausage, avocado slices, tomato slices, lettuce, and cheese if using.
    • Top with another piece of the frittata.
  4. Serve:

    • Serve immediately with your favorite hot sauce or ketchup on the side.
