Recipe: Breadless Breakfast Frittata Sandwich

No Bun, no problem... here is a recipe for a bunless egg sandwich.

Add ground turkey/Canadian Bacon and cheese to your egg. Add cheese to the egg mixture before cooking if you like cheesy eggs

As someone that is allergic to gluten, I am always searching for something that will replace bread. A Frittata is the Italian version of the American Omelette. It can be a nice substitute for a bunless egg sandwich.

Here is my recipe for the breadless breakfast sandwich that is gluten free and can also be made for vegetarians.

Hey Everyone!

I have been dying to frame the pictures I took of the beach last week and incorporate them into my everyday decor. Everything I looked at online was so expensive and I didn’t want something huge- just small accent pieces. Here is what I figured out. It is super simple!

1) Print your photos at Walgreens! – Yes, Walgreens. They have 4 by 4 prints which they now do for $.39 each and you can pick them up at your local store. They are currently running a special where you get 50% off all prints until March 17th!! Enter LUCKYDAY at checkout thru March 17, 2018. Link Here!  You can even pick them up the SAME DAY.

2) Order these frames from Amazon! Link Here. They are $19.95 for three. You can get a larger quantity too. I love the size and they fit the 4 by 4 picture perfectly.

February’s Recipe Gluten Free Pad Thai

Gluten Free Pad Thai Recipe

02-15-2018

Ana Veiga

I was casually browsing through Sprouts (a health food store) looking for gluten free noodles to try.

I wanted to try to make Ramen, but the Pad Thai noodles were on sale; so, I decided to go down this route instead.

I actually bought the noodles without researching a recipe.

The next day I embarked on the journey to making Pad Thai. I decided to google a recipe and found the one below.

I ended up having shrimp in the refrigerator, because I was going to make the Brussels Sprouts Caesar Shrimp Salad.

I did not have fish stock, bean sprouts, or nuts.

I also used a cast iron pan instead of a wok.

Additonal Tips:

Do make sure you undercook the noodles. Less is more since it will cook more when you combine everything.

I have a habit of not professionally measuring, since I’ve been cooking so long. I did use too much soy sauce on the shrimp and my mistake (didn’t ruin anything) was adding too much of the soy sauce to the pan when adding the shrimp. I would have preferred crispier shrimp.

I also added tofu (which I had never cooked before either). Wow I was feeling feisty that weekend.

When making the Thai Pad sauce, make sure you check if it is too sweet, salty, or sour for taste.

Here is the recipe:
