2 tbsp white vinegar

1 tbsp tamarind paste (or lemon juice as a substitute)

Β½ cup cashews (blended into a smooth paste with water)

1οΈβ£ Make the Avocado Filling
- In a bowl, mash avocados and mix in sun-dried tomatoes, red onion, cilantro, lime juice, salt, and pepper.

- Lay an egg roll wrapper on a clean surface in a diamond shape.
- Add a spoonful of avocado mixture to the center.
- Fold the bottom corner over the filling, then fold in the left and right corners.
