For the Seitan Ribs:

1 Β½ cups vital wheat gluten

ΒΌ cup chickpea flour

1 tbsp nutritional yeast

1 tsp smoked paprika
β
1 tsp garlic powder
β
Β½ tsp onion powder
β
Β½ tsp black pepper
β
Β½ cup vegetable broth
β
2 tbsp soy sauce
β
1 tbsp maple syrup
β
1 tsp liquid smoke
For the BBQ Glaze:

1 cup BBQ sauce (your favorite brand!)

1 tbsp maple syrup
β
1 tsp apple cider vinegar
π₯ Instructions
1οΈβ£ Make the Seitan Dough
- In a bowl, mix vital wheat gluten, chickpea flour, and spices.
- In another bowl, whisk broth, soy sauce, maple syrup, and liquid smoke.
- Combine wet & dry ingredients and knead for 2 minutes.
2οΈβ£ Shape & Bake
- Roll dough into a rib-like shape, about Β½ inch thick.
- Score the top lightly to mimic rib texture.
- Bake at 350Β°F for 20 minutes.
3οΈβ£ Add BBQ Glaze & Finish
- Brush ribs with BBQ glaze and bake for another 10 minutes.
- Grill for extra char & smoky flavor.
