🥢 Ingredients

For the Seitan Ribs:

1 ½ cups vital wheat gluten
¼ cup chickpea flour
1 tbsp nutritional yeast
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ cup vegetable broth
2 tbsp soy sauce
1 tbsp maple syrup
1 tsp liquid smoke

For the BBQ Glaze:

1 cup BBQ sauce (your favorite brand!)
1 tbsp maple syrup
1 tsp apple cider vinegar


🔥 Instructions

1️⃣ Make the Seitan Dough

  • In a bowl, mix vital wheat gluten, chickpea flour, and spices.
  • In another bowl, whisk broth, soy sauce, maple syrup, and liquid smoke.
  • Combine wet & dry ingredients and knead for 2 minutes.

2️⃣ Shape & Bake

  • Roll dough into a rib-like shape, about ½ inch thick.
  • Score the top lightly to mimic rib texture.
  • Bake at 350°F for 20 minutes.

3️⃣ Add BBQ Glaze & Finish

  • Brush ribs with BBQ glaze and bake for another 10 minutes.
  • Grill for extra char & smoky flavor.

4️⃣ Serve & Enjoy!

  • Slice into rib-sized pieces and serve with extra BBQ sauce!
