For the Seitan Ribs:
✅ 1 ½ cups vital wheat gluten
✅ ¼ cup chickpea flour
✅ 1 tbsp nutritional yeast
✅ 1 tsp smoked paprika
✅ 1 tsp garlic powder
✅ ½ tsp onion powder
✅ ½ tsp black pepper
✅ ½ cup vegetable broth
✅ 2 tbsp soy sauce
✅ 1 tbsp maple syrup
✅ 1 tsp liquid smoke
For the BBQ Glaze:
✅ 1 cup BBQ sauce (your favorite brand!)
✅ 1 tbsp maple syrup
✅ 1 tsp apple cider vinegar
🔥 Instructions
1️⃣ Make the Seitan Dough
- In a bowl, mix vital wheat gluten, chickpea flour, and spices.
- In another bowl, whisk broth, soy sauce, maple syrup, and liquid smoke.
- Combine wet & dry ingredients and knead for 2 minutes.
2️⃣ Shape & Bake
- Roll dough into a rib-like shape, about ½ inch thick.
- Score the top lightly to mimic rib texture.
- Bake at 350°F for 20 minutes.
3️⃣ Add BBQ Glaze & Finish
- Brush ribs with BBQ glaze and bake for another 10 minutes.
- Grill for extra char & smoky flavor.
4️⃣ Serve & Enjoy!
