βœ… Β½ tsp onion powder
βœ… Β½ tsp black pepper
βœ… Β½ cup vegetable broth
βœ… 2 tbsp soy sauce
βœ… 1 tbsp maple syrup
βœ… 1 tsp liquid smoke

For the BBQ Glaze:

βœ… 1 cup BBQ sauce (your favorite brand!)
βœ… 1 tbsp maple syrup
βœ… 1 tsp apple cider vinegar

1️⃣ Make the Seitan Dough

  • In a bowl, mix vital wheat gluten, chickpea flour, and spices.
  • In another bowl, whisk broth, soy sauce, maple syrup, and liquid smoke.
  • Combine wet & dry ingredients and knead for 2 minutes.

2️⃣ Shape & Bake

  • Roll dough into a rib-like shape, about Β½ inch thick.
  • Score the top lightly to mimic rib texture.
  • Bake at 350Β°F for 20 minutes.

3️⃣ Add BBQ Glaze & Finish

  • Brush ribs with BBQ glaze and bake for another 10 minutes.
