Peanut Tofu Satay 🌱🥜

Ingredients

For the Tofu Satay:
  • 1 block (14 oz) extra-firm tofu, pressed and cut into cubes
  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1 tbsp sesame oil (or neutral oil)
For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sriracha (adjust for spice level)
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/4 cup warm water (to thin out sauce as needed)
For Serving:
  • Chopped peanuts
  • Fresh cilantro
  • Lime wedges
  • Cooked rice or lettuce wraps

Instructions

1. Prepare the Tofu:

  1. Press the tofu for 15-20 minutes to remove excess moisture, then cut into cubes.
  2. In a bowl, mix soy sauce, maple syrup, lime juice, garlic powder, ginger, and sesame oil.
  3. Toss the tofu in the marinade and let it sit for at least 15 minutes.

2. Cook the Tofu:

  • Oven: Preheat to 400°F (200°C). Place tofu on a lined baking sheet and bake for 20-25 minutes, flipping halfway.
  • Air Fryer: Cook at 375°F (190°C) for 12-15 minutes, shaking the basket occasionally.
  • Stovetop: Heat a pan with a little oil and cook tofu until golden brown on all sides.

3. Make the Peanut Sauce:

  1. In a small bowl, whisk together peanut butter, soy sauce, maple syrup, vinegar, sriracha, ginger, garlic, and warm water. Adjust consistency as needed.

4. Assemble & Serve:

  1. Thread tofu cubes onto skewers if desired.
  2. Drizzle or dip in peanut sauce.
  3. Garnish with chopped peanuts, cilantro, and lime wedges.
  4. Serve over rice or with lettuce wraps for a fresh, flavorful meal!
